In the early embers of our coffee roasting journey, we always knew we wanted a classic flavour profile as part of our core range of offerings, and specifically, from Brazil. In the past, we've sourced notable names such as Bom Jesus and Bossa Nova for our Ridgeline, continuing with the same consistency expected.
For our newest iteration, we're absolutely chuffed to bits to have reserved an entire microlot of Red Catuai varietal from the Catanduva farm in Moreira; lead by head farmer, Alfredo Jesus.
Alfredo Jesus recently inherited Catanduva from his sister, Marie Nakao, a third generation farmer of Japanese heritage, continuing her committed work to high quality ethical speciality coffee in Brazil. In fact, Catanduva is named after their home town in Japan.
Catanduva is based in Moreira, in the Minas Gerais state; one of the newer speciality coffee growing regions in Brazil, having the perfect combination of elevation (800 - 1300 MASL) and also flat topography, allowing for mechanised working and defined seasons for growing with hot wet summers and dry warm winters. This climate is perfect for natural based processing, giving high-end produce; a great deal of speciality coffee in Minas Gerais gives big bold chocolate notes, rounded off with fruit undertones and subtle complexity.
This iteration of Ridgeline specifically is a pulped natural (semi-washed), meaning that much like the 'honey process' the cherry skin is removed within 24 hours of picking, while mucilage remains during the drying stage, allowing fermentation of the sugars to take place and develop a heavier body in the mouthfeel, perfect for espresso brewing. We get notes of Seville Orange, Dark Chocolate and Hazelnut throughout, a proper all-round consistent superstar.
