We're back in Mexico for another exceptional export from the Ensambles Social Project - so good, we've gone with a double-header of offerings from the most recent crop. Our first selection is from Sakubel in Los Altos de Chiapas.
Sakubel is a community project co-ordinated by Ensambles, one of our long time coffee importing partners - where in their coffee is bought above market price to increase investment in the area in education, equipment and above all else, safe-guarding.
This community lot is made up of producers native to the region, specifically speaking the indigenous Tseltal language; the Tenejapa, Chenalho and Oxchuc families, all with several generations of farming producers deeply rooted in their custodial duties of the land. In doing so, their coffee plantations are very often co-existent with traditional milpa systems, where corn, beans, squash and other vegetables are intercropped, supporting the soil health and enriching minerals. However, much like many producers in the region, their coffee suffers from 'la roya' (leaf rust) - to combat this, many 'rusticano' natural systems are put in place, such as using native fruit trees to shade the coffee growing trees, to protect them destructive insect behaviour and coffee plant disease.
Sakubel is a super clean and subtle offering, a perfect every-day drink, which we absolutely love for every brew method, whether it's an espresso or chemex. We get notes of milk chocolate, red cherry and sweet maple syrup.
Ensambles (whom we source Sakubel from) help to enrich lives in the often poorer states of Mexico, such as Chiapas and Guerrero, to reduce trafficking, narcotics trade and abuse.
