We're delighted to continue our work with Erik Sanchez at Volcan Coffee, both working with his cousin Edward Montiel and other local producers too in the Cajamarca region of Colombia, a rarely showcased speciality coffee growing region.
This lot falls under the latter category; working with Don Hernan Ruiz at Finca Buena Vista , a first-generation coffee producer, working with his wife, son and other local workers during the harvest season to produce some truly special speciality crop.
This particular lot is an extended washed fermentation, under-going traditional washing to begin with and de-pulping to remove the outer cherry before fermenting in stainless steel tanks with mucilage intact for 120 hours to break down the sugars in the mucilage, before a full clean and drying process to a 10-12% moisture content. We've also managed to snag a second go at the Chiroso variety, which we bought from Edward last year - it is often described as a rare and unusual variety due to it's lack of history, believed to be a mutation of Caturra and Ethiopian landrace varieties.
A classic Colombian tasting profile is present in this micro-lot, with clean seville orange, apricot and caramel. Fantastic as a filter, we'd go with a paper filter method to highlight the clean notes.
