El Chikon is the culmination of 55 micro-lot's in the La Mazateca region of Oaxaca; gaining it's name from El Chikon Toxaco, owner of the mountains in this region. La Mazateca is named after the indigenous population Mazatecos. 

We've continued to work with Ensambles, a year on from offering their 'Las Guerreras' project coffee - enriching our support for a group dedicated to growing coffee with conscience in Mexico El Chikon is made up of two historical varieties, Typica and Bourbon - some tree's from growers in the region are up to 40 years old and 3 meters high, with pruning of these trees often not even thought of, due to their traditional 'non-intervention' growing style. 

After ripening, cherries are floated and de-pulped manually, before being left to ferment without water in a wooden tank for up to 72 hours before being dried on patios. 

We think El Chikon works great for all brewing methods, particularly Aeropress and espresso brewing.
