Decaf is often an overlooked part of any coffee roaster's selection, but is an incredibly important part of our selection here. Mexico has had an incredible uprising in the ranks of speciality coffee quality in recent years and has rocked the decaffeinated world recently too, using only natural sources to remove caffeine from their coffee this decaf is 99.9% caffeine free and chemical free too.
Mexican Mountain Water Process is the lesser known sidekick of Sugarcane Decaf (prominent in Colombia), processing caffeinated coffee and turning it in to 99.9% caffeine free coffee, with all the flavour of their caffeinated counterparts. We love both Mountain Water and Sugarcane down to their lack of carbon footprint, processing all aspects within their respective countries. Mountain Water in particular uses pure water from Pico de Orizaba, the highest mountain in Mexico in conjunction with natural charcoal carbon filters - this process is completed via a mixture of steaming and placing the coffee in pressurised chambers with the filters; these filters are removed once at capacity and then removed caffeine is recycled.
We are really pleased to support the not-for-profit work done in Mexico by Raw Material; the state of Oaxaca, is one of the poorest states in regards to poverty in Mexico - with much lower production yields in coffee that rival countries too, it means that they struggle to keep up, but quality is improving at an incredible rate that we are delighted to support and help this economy grow.
