Congo, and hopefully the first of many for us here at Podda \u0026amp; Wren. \u003c\/p\u003e\n\u003cp\u003eWe've always been on the lookout for something from part of the world, with Ash having previously roasted D.R.C. before P\u0026amp;W, and we've finally found something to share from the Mutendero Washing Station in North Kivu. Mutendero is part of the Virunga Coffee Company, with a clear aim to produce high-end speciality coffee to export, with their strategy defining clear goals of good agronomic practice, quality in education to transfer to the workplace, and last but not least - better pay for farmers with higher revenue, year-on-year.\u003c\/p\u003e\n\u003cp\u003eD.R. Congo is bordered in the north by Uganda, an often popular origin of ours, so may be an evocative flavour note for many of our well-versed loyalists, with the Virunga National Park giving plenty of rainfall and highly fertile volcanic soil, much like the Rwenzori National Park across the border. Much like Uganda as well, sadly the region has often had a lot of poverty and lack of infrastructure, meaning that high quality arabica has often not been exported; but with speciality roasters buying more and more from D.R.C, we hopefully will see their infrastructure improve and poverty reduce. \u003c\/p\u003e\n\u003cp\u003eThis lot from Mutendero has been hand-picked before sorting at the wet mill, and fermenting for up to 24 hours with mucilage broken down in clean water channels before drying on raised african beds in the sun for up to 18 days with turning periodically to ensure a consistent dry, along with raking to prevent mold and overfermentation. We also see the parchment covered in this part of the world in the middle of the day, due to the intense heat and potential heavy rainfall. \u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eA proper African classic, with big bold citrus notes, and heavy on the sweetness, evoking golden syrup.
